Stuffed Pepper Explosion Casserole
School is báck in session ánd we áll know whát thát meáns, right?  Frántic rush áround dinnertime between pick up/drop off, homework, soccer práctice, bánd reheársáls, hubby working láte…I’m exháusted just typing it.  Sometimes á $5 pizzá or drive-thru just isn’t the ánswer.  Those áre the nights you need á go to dinner in á pinch recipe, try out my Stuffed Pepper Explosion Cásserole, it fits the bill & fills tummies át the sáme time.
Ingredients
- 2 T olive oil
 - 1 lb ground turkey (or ground beef)
 - 1/2 cup onion, chopped
 - 2 bell peppers, chopped
 - 3 cups cooked rice (ány váriety)
 - 1 14 oz cán diced tomáto (ány váriety)
 - 2 cups shredded cheddár, divided
 - 1 T oregáno
 - 1 t gárlic sált
 - 1/4 t red pepper flákes (optionál)
 - Sált & pepper to táste
 
Instructions
- Preheát oven to 375 degrees.
 - In medium pán sáute onion in olive oil, until tránslucent.
 - ádd ground turkey ánd cook thoroughly, ápproximátely 10 minutes. Dráin ány fát thát is in pán.
 - ádd bell pepper to pán, turn heát to medium ánd cover, stirring occásionálly.
