Indonesian Beef Stew


Tongseng is goat meat, mutton or pork stew dish in curry-like soup with cabbage and kecap manis (candy soy sauce). Tongseng is usually discovered in Indonesian region of Central Java; from Surakarta to Yogyakarta. However, it is believed that dish became originated from Klego district in Boyolali, Central Java. Traditionally, tongseng is taken into consideration as the merge among satay and gulai.

Ingredients:

  • approximately 200g cabbage, more or less shredded 
  • 3 Tbsp kecap manis (Indonesian candy soy sauce) 
  • 2 tsp salt or to taste ± 
  • 4 tbsp cooking oil 
Ground spices: 
  • 5 purple chilies 
  • 6 shallots
  • 6 cloves of garlic
  • 4 candlenuts 
  • ±1 tsp white/black peppercorn
  •  ±2 cm fresh turmeric (or 1 tsp powdered turmeric)
  •  ±2 cm sparkling ginger (or 1 tsp powdered ginger) 
  • 1 tsp coriander seeds (or 1 tsp powdered coriander) 
Using mortar and pestle (or spice grinder), ground all spices above until you get smooth puree

Method:
  1. In a wok or massive pan, warmth 4 tsbp cooking oil. Saute grounded spices, lemongrass, daun salam, kaffir lime leaves, galangal and birdeye chilies till fragrant and appears oily (the spice puree separated from oil).
  2. Stir inside the meat and continue to stir fry till meat alternate pale shade. Add about 500 ml (2 cups) hot water and cover the wok/ pan with the lid and let it prepare dinner until meat gets tender. Check sometimes maybe you want to feature extra water if the meat now not yet soft however the gravy almost dry. 
  3. After meat receives smooth, upload another ±500 ml hot water. Add in sweet soy sauce and salt, test the flavor. This meal have to has savory and light sweetness from the candy soy sauce. Continue to cook dinner till boiling once more.
